Delicious vegan chocolate chip cookies that are easy to assemble and delicious to share with anyone who follows a vegan or gluten free diet.
Sift almond flour into a medium bowl and stir in arrowroot starch, baking soda and salt.
In a small bowl mix together the melted coconut oil, maple syrup and vanilla.
Add the syrupy liquid slowly to the flour mixture and stir just enough to thoroughly combine.
Fold in the chocolate chips gently.
Place by the tablespoon full on a greased cookie sheet or parchment paper lined sheet and bake in a pre-heated 350 degree oven for about 15 minutes until lightly golden brown.
Allow to cool slightly and transfer to a wire cooling rack then serve.
