Best Mango Bread Recipe

Mango bread is fairly simple to make and a delicious bread toasted for breakfast or as an afternoon snack filled with vitamin C and sweet goodness!

Ingredients

  • 6 Mangos - peeled and chopped About 2 1/2 cups
  • 3/4 cup vegetable oil
  • 1 tsp fresh lemon juice
  • 2 eggs
  • 2 cups all purpose unbleached flour
  • 2 tsp ground cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup organic white sugar
  • 1/2 cup raisins (optional)

Instructions

  1. Combine dry ingredients in a large mixing bowl.  

  2. Add mango, lemon juice and raisins. 

  3. Beat eggs with oil and add to flour mixture.

  4. Pour into 2 greased 8 x 4 loaf pans. Bake at 350 degrees for about an hr or until toothpick comes out clean.
