EASY STRAWBERRY COBBLER with BISQUICK
Easy to make and perfect for a quick summer dessert, this strawberry cobbler will quickly become a favorite with most ingredients already on hand.

- 1 pint fresh strawberries frozen may be substituted - defrost
- 1 cup coconut sugar table sugar may be used instead
- 1 cup Bisquick baking mix regular or gluten free
- 1 egg
- 1 stick butter melted
Wash, hull and quarter strawberries. Place in the bottom of an 8" square baking dish.
Combine sugar and baking mix in a medium bowl with a fork. Stir in egg and mix...it will be clumpy.
I used coconut sugar which looks like brown sugar, but doesn't clump and is low glycemic.
Sprinkle the crumb mixture over the strawberries in baking dish. Drizzle butter evenly over the baking mix.
Bake at 350 for 35-40 minutes, or until brown on top. Allow to cool for about 10-15 minutes before serving.
Serve warm topped with vanilla ice cream or cold with whipped cream.
