Ingredients

  • 1 pint fresh strawberries frozen may be substituted - defrost
  • 1 cup coconut sugar table sugar may be used instead
  • 1 cup Bisquick baking mix regular or gluten free
  • 1 egg
  • 1 stick butter melted

Instructions

  • Wash, hull and quarter strawberries. Place in the bottom of an 8" square baking dish.
  • Combine sugar and baking mix in a medium bowl with a fork. Stir in egg and mix...it will be clumpy.
  • I used coconut sugar which looks like brown sugar, but doesn't clump and is low glycemic.
  • Sprinkle the crumb mixture over the strawberries in baking dish. Drizzle butter evenly over the baking mix.
  • Bake at 350 for 35-40 minutes, or until brown on top. Allow to cool for about 10-15 minutes before serving.
  • Serve warm topped with vanilla ice cream or cold with whipped cream.
