How To Make The Tastiest Healthy Ice Cream

Do you love ice cream in the summer? Growing up I was the typical skinny active kid who loved ice cream in the summer months and couldn’t wait to get my straw around a chocolate milkshake or my spoon into a fudge sunday!  If only we realized that as we became adults we would likely be watching our diets more carefully! I have some healthy alternatives today that have no added sugar and no dairy and are delicious on a hot day. You can make them for the kids and they are easy enough to adapt for adult parties with the addition of your favorite spirit.

I’ve made three flavors here and did the mixing one at a time in my blender. Once each flavor was blended, I poured the contents into a plastic bowl and set it into the freezer for about an hour. You want to be able to scoop each flavor out easily, so an hour should be the maximum time for freezing to a soft, creamy consistency:
 
 
3 bananas sliced and frozen overnight
1/2 cup coconut milk
(optional) 1 teaspoon vanilla or peppermint extract
 
3 or 4 mangos, peeled and cut into slices and completely frozen overnight
1/2 cup coconut milk
 
(optional) 1 teaspoon vanilla
 
1/2 small seedless watermelon scooped out and frozen overnight
1/2 cup coconut milk
 
(optional) 1 teaspoon vanilla

For this banana watermelon “ice cream” I let it melt for just a little while so that I could drink it and added some cocoa nibs to the top.

These are so colorful and great for dinner parties! The banana layer has a creamy appearance, the mango is a golden orange and the watermelon a pretty pink. Just like sorbet that you’d find in a fancy ice cream shop but without the sugar.
