Vegan Chocolate Chip Cookies - Gluten And Dairy Free

Delicious vegan chocolate chip cookies that are easy to assemble and delicious to share with anyone who follows a vegan or gluten free diet.

Ingredients

  • 1 1/2 cups almond flour
  • 2 tbsp arrowroot starch
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup maple syrup
  • 2/3 cup coconut oil
  • 2 tsp vanilla extract
  • 1/2 cup dairy free chocolate chips

Instructions

  • Sift almond flour into a medium bowl and stir in arrowroot starch, baking soda and salt.
    In a small bowl mix together the melted coconut oil, maple syrup and vanilla.
    Add the syrupy liquid slowly to the flour mixture and stir just enough to thoroughly combine.
    Fold in the chocolate chips gently.
    Place by the tablespoon full on a greased cookie sheet or parchment paper lined sheet and bake in a pre-heated 350 degree oven for about 15 minutes until lightly golden brown.
    Allow to cool slightly and transfer to a wire cooling rack then serve.

I’ve given up a lot in eliminating dairy and gluten, but have been experimenting and sources recipes, writing things down, varying ingredients and trying foods out on my husband. He is the one that said these vegan chocolate chip cookies that are dairy free and gluten free are MIND BLOWING! That’s quite a compliment because he considers himself the king of chocolate chip cookies. Here’s how…and it’s SO EASY and FAST to make!

VEGAN CHOCOLATE CHIP COOKIES – GLUTEN & DAIRY FREE

This recipe uses almond flour. I’ve tried other flours but prefer the taste of almond.

Mixed together the melted coconut oil, maple syrup and vanilla have an interesting flavor.

I use THIS BRAND of chocolate chips and the brand has some other great products in their line to explore. If you follow a gluten free diet but do eat dairy, just use regular chocolate chips.

    1. Tracey…I’m sorry, but it is 1/2 tsp only. The transcription onto the recipe card somehow was messed up!

    1. I’m not sure Wendy…since this is the “shortening”. Perhaps try ghee, which I use as butter.
